Ingredients

  • 2 tomatoes (ripe, diced)
  • 1/2 red onion (finely chopped)
  • 2 tablespoons fresh basil leaves (chopped)
  • 2 teaspoons balsamic vinegar
  • 8 slices Italian bread
  • 2 cloves garlic (halved)
  • 7 ounces ricotta
  • 1 tablespoon capers (chopped)

Directions

  1. In a bowl, combine tomatoes, red onion, basil and balsamic vinegar. Season.
  2. Grill or toast bread until golden. While still hot, rub 1 side of each slice with garlic. Arrange toast on a serving platter. Top with tomato mixture and spoonfuls of ricotta. Sprinkle with capers. Season and serve.
