Made with cocoa powder and melted dark chocolate, these brownies are full of delicious chocolatey flavor. Carrying a hint of orange zest, these brownies are dense and moist. Melted chocolate and chopped walnuts are the crowning glory of these rich decadent brownie squares. These brownies are not for the faint of heart, but rather for the chocolate lovers.

Ingredients

  • 180 grams dark chocolate (chopped)
  • 150 grams butter
  • orange zest
  • 6 egg yolks
  • 150 grams sugar
  • 6 egg whites
  • salt
  • 75 grams flour
  • 30 grams cocoa powder
  • 100 grams walnuts (chopped)
  • dark chocolate
  • walnuts

Directions

  1. Preheat the oven to 180 degrees Celsius.
  2. Heat the chocolate, butter, and a pinch of orange zest using a double boiler. Set aside.
  3. In a bowl, beat the egg yolks and the sugar.
  4. In a separate bowl, whip the egg whites with a pinch of salt.
  5. In another bowl, mix the flour and cocoa powder, and fold into the egg whites. Pour this mixture into the egg yolks. Add the melted chocolate and nuts and mix.
  6. Pour the batter into a baking pan lined with parchment and bake for 25 to 30 minutes.
  7. Remove from the oven and let it cool. Once cool, cut into 4 centimeter by 4 centimeter squares.
  8. Melt the chocolate. Spread onto the brownies and sprinkle with walnuts.

This is not the recipe for anyone who is watching their cholesterol. It is so decadent and delicious. I drizzled the top with cream cheese before I added the nuts. My dad always put cream cheese on our brownies when I was a little girl. Now, I do that to mine to.
