  • 2 cups garbanzo beans (blanched green, thawed if frozen)
  • 3 cups brown rice (cooked, let cool to room temperature if you're cooking rice especially for the salad)
  • 1 cup carrots (shredded or matchstick, coarsely chopped)
  • 1/4 cup green onions (thinly sliced)
  • 1/2 cup chopped parsley (I used flat Italian parsley, but curly parsley will work)
  • 2 1/2 tablespoons lemon juice (fresh-squeezed)
  • 1 teaspoon ground cumin
  • 1/4 teaspoon ground coriander
  • 1 pinch cayenn ground pepper (could also use a dash of hot sauce)
  • 4 tablespoons extra-virgin olive oil
  • black ground pepper
  • salt
  • 1/4 cup toasted pine nuts (lightly, or use other nuts of your choice)

This is good! We're big on spices so we doubled the amount of cumin (used the roasted cumin) and corriander. Didn't have green garbonzos but canned garbonzos worked fine in a pinch.
