If you're looking for a bread that's gluten-free & quick to make, try this recipe!

Ingredients

  • 1 cup brown rice flour
  • 1/4 cup water (and possibly then some once mixed)
  • 2 tablespoons milk (choice I used vanilla rice milk)
  • 1/2 tablespoon baking soda
  • 1/4 teaspoon pink salt (or substitute)
  • herb (blend of choice optional, marjoram, gluten-free curry powder, rosemary)
  • olive oil (or substitute)
  • 2 extra-large brown eggs

Directions

  1. Mix dried ingredients together seperately
  2. Mix wet ingredients (not oil) together sperately
  3. combine both mixes together and mix until proper consistency. (should be in between thick & liquidy
  4. Preheat oven to 450 ferenheit
  5. Poor batter into oiled pan
  6. Bake 10 minutes on lower rack
  7. Bake 10 minutes on higher rack
  8. Take out & enjoy!

Did I miss what type of pan to use?? I just put the batter into an 8" loaf pan and it barely covers the bottom. If it turns out OK, I'll probably double the recipe next time or calculate more servings! I have so much brown rice flour that I wanted to use it up.
