Description

This French cheese pie is the perfect mix of sweet and tart. Lemon and orange zest pepper the custard-like filling that fills a crisp and buttery crust. This pie is great in winter when citrus fruit is at its best. You can mix up the citrus fruit you use, depending what you have on hand. Grapefruit and lime is another great combination that works great in this pie.

Ingredients

  • 500 grams cheese (brousse, whey cheese from Goat or sheep milk)
  • 1 pastry (sweet dough)
  • 3 eggs
  • 150 grams sugar
  • 1/2 orange zest
  • 1/2 lemon zest
  • powdered sugar

Directions

  1. 1Drain cheese in a colander.
  2. 2Preheat oven to 425 degrees Fahrenheit.
  3. 3Roll out the dough, spread in a pie pan, and refrigerate.
  4. 4Whisk the eggs with the sugar in a bowl until the mixture whitens. Add the drained cheese and mash with a fork. Add the orange and lemon zest. Mix.
  5. 5Fill the pie shell with the mixture and bake for 30-35 minutes. Cool.
  6. 6To serve, sprinkle with icing sugar.
