Ingredients

  • 2 shallots (chopped)
  • 20 ounces sliced mushrooms
  • 8 ounces broccolini (bottoms trimmed)
  • 3 tablespoons ginger (chopped)
  • 3 tablespoons olive oil
  • 3 tablespoons black bean (hoisin, or oyster sauce)
  • 1/4 cup rice wine vinegar
  • quinoa (or brown rice for serving)

Directions

  1. Place olive oil and ginger in a cast iron skillet or any other non-stick skillet. Cook for a minute.
  2. Add broccolini and cook for 2-3 mins. Add mushrooms and shallots and cook stirring occasionally for 5 mins. Add sauce and vinegar and stir for 1 minute.
  3. Turn heat off and add sesame seeds (optional) and serve over quinoa or brown rice.
