Made with steamed broccoli florets, slices of smoked salmon, and shredded Manchego cheese this quiche has a flaky crust and a creamy filling. You can make your own pie dough or purchase a premade pie dough. You do need to blind bake the crust before adding the filling to make sure that you do not end up with a soggy bottom. Bake time is 30 minutes.

Ingredients

butter
flour
pastry dough (unsweetened)
100 grams broccoli
3 eggs
salt
50 milliliters whipping cream
3 slices smoked salmon
50 grams manchego cheese (shredded)

Directions

1Preheat the oven to 180 degrees Celsius.
2Butter and flour a pie pan. Roll the dough into a round with a rolling pin and place into the pie pan, trimming any extra dough. Bake for 10 minutes.
3To prepare the filling, cut the broccoli into pieces and steam until cooked.
4Whisk the eggs together with the cream and add salt to taste. Set aside.
5Place the broccoli onto the bottom of the pie pan and top with the salmon in a layer. Pour the egg mixture over the salmon and sprinkle with cheese.
6Bake for 30 minutes, or until an inserted toothpick comes out clean.
