Searching for brunch inspiration? Look no further than this recipe for Broccoli and Salmon Quiche. Made with steamed broccoli florets and pieces of smoked salmon, this quiche has a flaky crust and a creamy filling. You can make your own pie dough or purchase a premade pie dough. You do need to blind bake the crust before adding the filling to make sure that you do not end up with a soggy bottom. Bake time is 30 minutes.

Ingredients

  • 3 eggs
  • 50 milliliters whipping cream
  • 3 slices smoked salmon (chopped)
  • 100 grams broccoli
  • 50 grams manchego cheese (grated)
  • salt (to taste)
  • pie dough (Unsweetened, purchased or homemade)

Directions

  1. 1Preheat the oven to 180 Celsius.
  2. 2Grease and flour a pie pan. Roll out the dough and cut into a circle. Fit the circle of dough into the pie pan, trimming any excess dough and pinching the edges. Bake for 10 minutes.
  3. 3Steam the broccoli until tender. Set aside.
  4. 4WHisk the eggs together with the cream and add salt. Set aside.
  5. 5Cut the broccoli into florets and place into the bottom of the pie plate. Add the salmon on top. Pour the egg mixture over the salmon and sprinkle with cheese.
  6. 6Bake for 30 minutes, or until an inserted toothpick comes out clean.
