- 18 ounces russet potatoes (4 medium)
- 1 1/2 cups broccoli florets (chopped)
- 2 cups cauliflower (chopped)
- 1/2 cup low fat buttermilk
- 1 tablespoon chives (minced, optional)
- 1 cup shredded low fat sharp cheddar cheese

A good and healthier version of the recipe. I used spicy cheese instead of sharp cheddar and a lot more broccoli than recommended.
