Yummy! My boyfriend and I like making these once a week for easy breakfasts on the go. You can get away with adding an extra egg or two to increase yield.

Great recipe! One variation: I use a little extra broccoli (4-5 cups). Also, I use olive oil spray on the mini muffin tray, sea salt and fresh ground peppercorn. This tastes great. The most important step is pressing out water from the broccoli before chopping it.

OMG. Hubs made them last year to bring to the other outlaws Christmas dinner, and we’re invited again, and they want those. If we can not eat them all before we leave home. Oh, add EXTRA CHEESE to taste, the recipe can take it. Awesome cheesy goodness.

it was a little dry. but next time maybe add a bit less bread crumbs and a little more cheese or use cheez whiz. but other than being a little dry they were amazing

amazing, i used tge broccoli in the microwave steam bags...was so much easier & left the onions out due to kids..i qlao sprayed my mini muffin pan with cooking spray & they came right out

“Average” is what comes to mind. As others have stated, these have no exciting flavors - it’s chopped up broccoli cupcakes, and if u love broccoli, then maybe it’s your dream come true. My 3 boys unfortunately are not the biggest broccoli fans. I had them dunk them in ranch, which defeated the purpose of a healthy side dish. Definitely has potential with some doctoring up - the cooking method was spot on! Did coat muffin tins with avocado oil, so no stick.

Personally, I thought these were bland if u follow the recipe exactly as is. It needed some serious seasoning or something to make them pop. Somebody mentioned bacon, that may do the trick. I was really disappointed in these though because they were fun to make and looked so promising. Needless to say, I threw them out. On the bright side, my dog liked them! Haha
