Really good little broccoli pancakes for a side. Will do again if I have leftover broccoli.

I added some finely diced onions, doubled the recipe so used 2 whole eggs 2 egg whites

I messed around with the ratio of ingredients to create a base that was much heavier on the broccoli. Turned out great, especially with a slice of melted cheddar on top.

Tasty, used cheddar cheese because it’s what I had, but bet it would be even better with the parm

Its so easy to make. I doubled up the quantity and added margarine instead of cheese and tasted great!

Delicious! I left out Italian seasonings & used a little garlic salt. I doubled the recipe & it was great!

Pretty good fritters. I doubted they would hold together but they were perfect. Other attempts no good but these were pretty fab

don't have pancake mix on standby so i just used a little baking powered baking soda and flour also added fresh garlic and onions delicious

Turned out really good! I would add a tad more salt and garlic powder. I also used a whole egg instead of just the egg whites .

Very good! I tripled the recipe for a family of 5 and that was a perfect amount. I also used almond flour instead of pancake mix. I added more almond flour than what the recipe called for, just adding a small bit at a time until the mixture held together.

I was impressed with how easy these were they are super quick for a nice snack! I don't really care for italian seasoning so i only put a little bit in it. Next time i think ill try oregano :)

I made 3x this recipe and it came out better than I expected! I will make this again!
I used buttermilk pancake mix instead of fat free and it tasted just right.

It needed more salt or other seasonings but very excited about this new way to prepare broccoli. It looked & tasted good overall.

This came out even better than I imagined it would. I would have liked a little more for two people so I think we will make a bigger batch next time. We didn't have Italian seasoning so we added oregano, rosemary and thyme and we had to do without the garlic powder. We also added a little bit of cheddar cheese along with the Parmesan.

This was Delicious, Easy and healthy. I just scooped it lightly onto a hot pan and gently pushed it down after it cooked for a minute so it didn't break apart. I would personally eat this for breakfast as well. YUM YUM

Great way to make broccoli shine. I used flour instead of pancake mix and turned out great. Yum! We thought it would be great for kids too.

Made these with cauliflower and they are a wonderful side dish. Great way to get kids to eat veggies.

Surprisingly good, definitely will make again. It may be because I used frozen broccoli but I had to add an extra Tbs of pancake mix and I still couldn't form into patties. I just put the scoop directly into the pan & flattered, was so much easier that way. Once the cheese melted and the egg started cooking they held together nicely and were easy to flip. The seasoning is good as is but I will probably play around with different spices next time.
