Give chicken breast a fancy twist with this tasty broccoli-cheddar recipe! Creamy on the inside, and crunchy on top, this combination is sure to please a crowd.

Ingredients

  • 2 pounds skinless chicken breasts
  • 2/3 cup panko breadcrumbs
  • 2 tablespoons dijon mustard
  • 1 1/3 cups broccoli
  • 1/4 cup plain greek yogurt
  • 1/2 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/2 cup shredded sharp cheddar cheese

Directions

  1. Preheat the oven at 425F.
  2. Line a large sheet pan with parchment paper.
  3. Finely chop the broccoli.
  4. Add the broccoli, Greek yogurt, salt, garlic powder, and cheddar to a medium mixing bowl. Stir together the ingredients until well-combined.
  5. Cut a large slit in each chicken breast to create a pocket for the broccoli-cheddar stuffing. Using a spoon, fill each pocket with the broccoli-cheese mixture, and seal up the hole with 1-2 toothpicks. Repeat with the remaining chicken breasts.
  6. Brush the top of each chicken breast with dijon mustard, and sprinkle with breadcrumbs. Place the chicken breasts on the parchment-lined sheet pan.
  7. Insert the sheet pan into the oven and bake for 30-35 minutes or until the thickest part of the chicken reaches an internal temperature of 165F.
  8. Remove the sheet pan from the oven, and let the chicken rest for 5 minutes.
