Next time I will probably make it in a casserole dish bc they didn’t hold very well. Other than that, love the recipe!

I actually put my into a casserole dish, I don’t alter the ingredients at all. My extremely picky family LOVES IT!

Great! Took the advice of making sure the cups were packed down well before baking. I also used regular muffin tins instead of mini muffin tins. Great for meal prep!

They were good I also added half a jalapeño for a kick! Only thing I would do differently next time is pack the cups a bit with the back of a spoon. Mine weren’t dense enough and were kinda crumbling instead of a nice firm cup

My husband and kids loved it! I put everything but the quinoa in a food processor to get it small enough. I like spice and was heavy handed with the red pepper, tasted great! Hit with everyone

Pretty good. I forgot the red pepper flakes, so it was a little bland. If/when I make it again I would use all stock to cook the quinoa, double the garlic, make sure to add some red pepper flakes, add more cheese on top and maybe just bake it in a casserole dish instead of as individual cups.

Fairly tasty, but could have used more flavour!

These were OK - I used vegan cheese - these needed hot sauce/bbq sauce and lots more seasoning.

They are simple to make and a good way to get the kids eating some vegetables. However, don't forget to add salt as it will be very bland without it. Even with salt it's still not very flavourful. Maybe I should have doubled the paprika.

I added cauliflower instead of all broccoli. The recipe did not call for seasoning so if you are just using water to cook the quinoa , do add your own seasoning.

Yummy! I modified it by using white onions, and tomatoes and a few sprinkles of salt, it still turned out delish! I added sour cream on the top and a little sriracha sauce :) mmmmm

It turned out so good! Can't wait to share with friends!

Couldn't stop eating these the entire day. It's great for using up leftover quinoa, cheese, or vegetables.

The quinoa needs to be cooked in Chicken Broth instead of water or it will be pretty flavorless. I might give this recipe another shot but it definitely isn't to die for.

These are delicious, I even tried them with different veggies: shredded carrots, peppers. They are to die for

Really enjoyed these. Made them as an appetizer for a party - was asked for the recipe many times.
Nicolioli K. 11 Apr 2016
It turned out just fine. I didn't add the onion which I regret because it might've added more flavor. Next time I would most definitely add salt and and pepper to this mix because without them, the muffin turned out a bit flavorless.

Yummy! We really enjoyed this. We cooked chicken and paired it with mini broccoli cheddar quinoa bites delish!
