  • 1 broccoli (generous cup of cooked, slightly cooled and diced into very small pieces. I usually steam it or boil it until bright green and tender.)
  • 6 scallions (finely diced)
  • 1 jalapeno pepper (minced)
  • 2 cups quinoa (cooked and cooled)
  • 2 limes (zest one and reserve the zest.)
  • fresh parsley (small handful of chopped, or cilantro, optional)
  • 1/2 cup cheddar cheese (grated, or cheese of your choice.)
  • 2 large eggs
  • 2 tablespoons milk
  • 1/2 cup gluten-free baking mix (Pamela's, or self rising flour)

Great fritters! I made extra broccoli and quinoa to use later. I also added a bit a salt. These are super Yummly!
