  • 1 ounce onion (– chopped)
  • 1/2 garlic clove (– crushed)
  • 1/2 teaspoon nutmeg
  • 5 ounces broccoli
  • salt
  • black pepper
  • 1/4 cup water
  • 1 egg
  • 1 ounce mature cheddar cheese

    Directions

    1. Place onion and garlic in a small saucepan with a tablespoon of water. Cook over medium heat until dry. Add nutmeg and stir. Break broccoli into small florets and add. Pour a 1/4 cup of water into the saucepan, follow with salt and pepper (to taste). Cook over medium heat until all the water has evaporated and the broccoli is soft, but still retains its shape.
    2. Place the ingredients in a large ramekin or small soufflé dish. Press the broccoli down to fill gaps. Pour egg over and top with the cheese. Cover and microwave for 1.5 to 2 minutes or bake in a conventional oven at 180 degrees C – or 360 degrees F until done.
    3. Remove from the oven, sprinkle with paprika or nutmeg and serve.
