Brioche French Toast with Strawberries

  • 2 eggs
  • 4 tablespoons sugar
  • 2/3 cup milk
  • 1 Orange (small, juiced, grated zest)
  • 8 slices brioche (slightly stale, about 1 inch thick, cut in half and crusts removed)
  • 3 1/2 tablespoons butter
  • 10 1/2 ounces strawberries (halved if large)
  • 1 teaspoon vanilla extract
  • powdered sugar (for dusting)
  • mint (as garnish)

    Directions

    1. Beat the eggs and 3 tbsp sugar for 2 mins. Stir in the milk and 2 tbsp orange juice.
    2. Melt 3 tbsp butter in a frying pan. Working in batches, dip brioche in the egg mixture and cook for 4-5 mins, turning, until golden on both sides. Drain on paper towels.
    3. Melt remaining butter in a separate frying pan and sauté the strawberries for 2 mins. Add the vanilla extract, 2 tbsp orange juice and 1 tbsp sugar and simmer for 2 mins.
    4. Arrange the brioche and strawberries on plates, dust with powdered sugar and decorate with mint.
