- 1 carrot (medium-sized, peeled and julienned or shredded)
- 1 avocado (cubed)
- 2 Tbsp. olive oil
- 1 Tbsp. apple cider vinegar
- 2 Tbsp. maple syrup
- 1 lemon (small, juiced)
- 1 Tbsp. fresh parsley (chopped)
- 1 tsp. Dijon mustard
- 1/4 tsp. kosher salt
