Easy to make, delicious and fun to eat. My son loved them.

If pepper is big, it's pretty tasty if white cottage cheese's added.

Added cream cheese to the spinach mixture. Came out great
Frozen spinach is not the best, better to use fresh.
It gets 4 stars for potential but this recipe is quite lacking in flavor as is. Variations I’ve made are using fresh spinach and quickly sautéing it with coconut oil (or butter if you do that) and a clove of pressed garlic (or two!) until just wilted. If you like a stronger smoky flavor of the roast pepper use the broiler on low, top rack, until softened and black blisters form instead of roasting at 400 for the first 15mins (they also cook faster this way-usually done after about 4mins per side). If you like you can top with fresh basil or even add advicado and bacon pieces on top or sometimes even just salsa on top is enough of a flavor punch if I’m in a hurry.. I make this often using different variations to change it up.
i only made one bell pepper and just decreased the ingredients for myself. will definitely be making again! it’s easy if you make it at night, refrigerate and pop it in the microwave for a quick breakfast!

The next time I make this, I will definitely use fresh spinach! The frozen chopped spinach made it taste nasty.

I enjoyed it, but I added a little bit of cheese between the spinach and egg, as well as salt/pepper to taste.

Excellent if you add cheese, salt and pepper

I did modify it and promptly deleted this boring excuse for a recipe...I'd rather scramble a couple of eggs....😩
