Really good and quick and easy. i added bacon before the egg and some seasonings. turned out great for flavour. Will cook longer next time as my egg was a bit runny at bottom of pepper.

Like the other reviewers, I found it bland. It’s a good start though and you can really run with your imagination. I added quinoa, broccoli and bacon to mine. I can’t wait to make it again with a new twist.

It gets 4 stars for potential but this recipe is quite lacking in flavor as is. Variations I’ve made are using fresh spinach and quickly sautéing it with coconut oil (or butter if you do that) and a clove of pressed garlic (or two!) until just wilted. If you like a stronger smoky flavor of the roast pepper use the broiler on low, top rack, until softened and black blisters form instead of roasting at 400 for the first 15mins (they also cook faster this way-usually done after about 4mins per side). If you like you can top with fresh basil or even add advicado and bacon pieces on top or sometimes even just salsa on top is enough of a flavor punch if I’m in a hurry.. I make this often using different variations to change it up.

i only made one bell pepper and just decreased the ingredients for myself. will definitely be making again! it’s easy if you make it at night, refrigerate and pop it in the microwave for a quick breakfast!
