Ingredients

  • 2 tablespoons all-purpose flour
  • 1 3/4 cups corn flakes (crushed)
  • 1 egg (beaten)
  • 5 1/4 ounces boneless pork chops
  • 2 tablespoons oil
  • 4 slices bread (toasted)
  • 4 leaves lettuce
  • 2 tablespoons ketchup
  • 1/4 pound cucumber (thinly sliced)
  • 1 large tomato (thinly sliced)

Directions

  1. Season the flour and spread on a plate. Spread the corn flakes on another plate and place the egg in a shallow dish. Dredge the pork in the flour, then the egg, then the cornflakes. Heat the oil in a frying pan and fry the pork over low-medium heat for 4 mins on each side. Drain on paper towels.
  2. Top 2 slices of toast with 2 lettuce leaves and 1 tbsp ketchup each. Place a pork chop on top then add the cucumber, tomatoes and remaining bread. Cut in half diagonally and secure with cocktail skewers.
