These make a great meal for the whole family, try them as the topping on a salad or have them with some oven-baked sweet potato fries for a simple dinner the kids will love.

Ingredients

  • 400 grams chicken strips
  • 1 egg
  • flour
  • breadcrumbs
  • 5 cups grated coconut (tablespoon)
  • salt
  • pepper

I made these for a crowd and everyone loved them. If you cut the strips thinly, they do not take too long to cook, so keep an eye on the pan. I kept them in a warm oven until they were all cooked and ready to serve.
