Ingredients

  • 2 boneless chicken breast
  • 1 eggs (whipped or egg beaters)
  • 1/4 teaspoon garlic powder
  • 1 cup Italian style breadcrumbs (Progresso)
  • 2 tablespoons olive oil
  • salt
  • pepper

Directions

  1. Rinse and dry chicken.
  2. Pound chicken with a wooden mallet.
  3. Mix egg and garlic powder.
  4. Dip chicken in egg mixture.
  5. Coat with bread crumbs.
  6. Heat oil in teflon skillet.
  7. Heat ungreased cookie sheet in 350 degree oven.
  8. Brown chicken quickly.
  9. Place on hot cookie sheet.
  10. Bake in oven 10 to 15 minutes.
  11. Salt and pepper to taste.
  12. Serves 2.
