Ingredients

  • 2 eggs
  • 2 cloves garlic (crushed)
  • 2 tablespoons fresh flat leaf parsley (finely chopped)
  • 1 cup dried breadcrumbs
  • 3/4 cup grated pecorino cheese
  • 4 boneless skinless chicken breasts (cut horizontally1/4 inch-thick slices)
  • oil (for frying)
  • lemon wedges
  • salad

Directions

  1. Beat eggs and 2 tbsp water in a shallow dish. Beat in garlic and parsley. Combine breadcrumbs and cheese on a large plate and season with salt and black pepper.
  2. Dip chicken slices, one at a time, in beaten egg mixture, then coat firmly with breadcrumb mixture. Place on a foil-lined baking pan in a single layer. Cover and refrigerate for at least 15 mins.
  3. Heat the oil in a large skillet on medium-high heat. Cook chicken until golden on both sides and cooked through. Drain on paper towels. Serve hot with salad and lemon wedges.
