Ingredients

  • bread (Tuscan, or similar crusty bread, stale, sliced thick)
  • water
  • tomatoes (diced)
  • red onion (peeled and diced)
  • cucumber (diced)
  • celery (diced)
  • fresh basil (minced)
  • extra-virgin olive oil
  • red wine vinegar
  • salt
  • ground black pepper

Directions

  1. Add the bread slices to a bowl.
  2. Cover with water and set aside for 20 minutes.
  3. Add the tomatoes, onion, cucumber, and celery to a salad bowl.
  4. Add the basil and toss well.
  5. Strain the bread and crumble into the salad bowl with the vegetables.
  6. Season with oil, vinegar, salt, and black pepper.
  7. Set the salad aside for a few hours until ready to serve to allow the flavors to infuse.

I’ve never used bread this way before so I bought a good Tuscan loaf, just for this recipe, and was very pleased with the resulting texture. The salad was colorful and bursting with flavor
