A highly adaptable recipe, this bread cake — a.k.a. bread pudding — is also a great way to use up day-old bread. Soaked in a mixture of milk, egg, sugar, flour and cocoa, pinenuts, raisins, amaretti cookies and cinnamon up the ante even further. Of course, you can add your favorite ingredients instead. Suggestions include chocolate chips; pecans, hazelnuts or walnuts; and dried cherries. The cake is baked in a springform pan until the custard is set but not dry.

Ingredients

  • 500 grams milk
  • 300 grams bread (approximately)
  • 1 large egg
  • 250 grams sugar
  • 180 grams flour
  • 130 grams cocoa
  • pine nuts
  • sultanas (soaked in rum)
  • 10 Amaretti Cookies (crushed)
  • ground cinnamon

Directions

  1. Preheat the oven to 180C.
  2. Soak the bread in the milk and stir with a wooden spoon until it is of a mushy consistency.
  3. Add the egg, sugar, flour, chocolate, a handful of pine nuts, a handful of sultanas with the rum, Amaretti cookies, and cinnamon. Stir the ingredients to combine well until the mixture is soft. Add a few drops of milk, if necessary, to make the mixture softer.
  4. Place the mixture in a buttered round springform pan.
  5. Bake for approximately 50 minutes.
  6. Remove the cake from the oven, let it cool, and serve.

Yesterday was my first attempt at baking this bread cake recipe and I was very stunned with how it ended up. It was very tasty and did not turn out extremely hard. I was shocked at how quickly I was able to bake it and that it did not need a ton of time to make it. I will be baking this 4 star cake recipe throughout the year.
