Brandy Custard with Cinnamon Mascarpone

Ingredients

  • 2 cups milk
  • 1 1/4 cups heavy cream
  • 6 egg yolks
  • 1/3 cup sugar
  • 1 teaspoon vanilla bean paste
  • 2 teaspoons corn starch
  • 1 tablespoon brandy
  • mascarpone (Cinnamon Sugar)
  • 1 cup mascarpone
  • 2 tablespoons cinnamon sugar
  • 1 tablespoon powdered sugar (sifted)
  • 1 tablespoon orange liqueur (or orange extract)
  • 2 tablespoons milk

Directions

  1. In a medium saucepan, combine milk and cream. Heat until just below boiling point.
  2. Whisk egg yolks and sugar in a bowl until creamy. Whisk in vanilla bean paste and cornstarch. Gradually whisk hot milk mixture into egg mixture. Return mixture to pan and stir over low heat, without boiling, until custard thickens. Strain custard into a clean bowl and stir in brandy.
  3. Place mascarpone in a medium bowl. Fold in cinnamon sugar, powdered sugar, orange liqueur or extract and enough milk to make a spoonable consistency. Serve brandy custard topped with cinnamon mascarpone.
