  • freshly ground pepper
  • 3 tablespoons vegetable oil
  • 1 1/2 cups dark beer
  • 10 garlic cloves (peeled and minced)
  • 1 inch fresh ginger (piece of, peeled and minced)
  • 3 tablespoons Japanese rice vinegar (or Chinese)
  • 1 1/2 ounces semisweet chocolate (or bittersweet, chopped, I used Xocopili)
  • 1/2 teaspoon red chili powder
  • 1 cup hoisin sauce
