  • 4 pounds chicken thighs (both bone-in and skin-on, and drumsticks)
  • kosher salt
  • freshly ground black pepper
  • 1 tablespoon poultry seasoning (my recipe comes from my cookbook!)
  • 4 strips bacon (thick cup Applewood)
  • 1 onion (medium, chopped)
  • 2 carrots (sliced)
  • 2 celery stalks (sliced)
  • 3 tablespoons all purpose flour
  • 14 ounces fire-roasted diced tomatoes (pureed in food processor)
  • 1 cremini mushrooms (ounce container, white button would work too)
  • 16 potatoes (baby redskin, halved, or quartered if large)
  • 1 quart low sodium chicken broth
  • fresh parsley (minced)
  • sourdough bread (Serve with torn)
