Ingredients

  • 2 1/4 cups granulated sugar
  • 2 tablespoons glucose syrup
  • 1 cup heavy cream
  • 3 1/2 tablespoons butter (chopped and softened)
  • 1/2 cup bourbon whiskey

Directions

  1. Combine sugar, 1/3 cup water and glucose in a medium pot over medium heat. Cook, stirring, without boiling, until sugar is dissolved. Bring to a boil. Boil, uncovered, for about 8 mins, or until golden brown. Remove from heat.
  2. Carefully whisk in cream (the mixture will bubble fiercely). Place over low heat and whisk in butter, 1 piece at a time, until combined. Whisk in Bourbon. Remove from heat and let cool to room temperature.
