This recipe was phenomenal!!! The onion gravy was absolutely delicious on top of mashed potatoes and on the beef. The beef was so tender! I highly recommend. Altered the recipe slightly by adding some herbs de Provence.

I made this because bottom round was on sale and I was tired of all the other meat choices at my local grocery store, My husband has disliked every kind of roast beef that I have ever made. Well, all I got from him was praise on this recipe! Later in the week, I made beef stew from the leftover meat and onion gravy. Another Hit! The only thing I did was to
poke some fresh garlic slivers into the meat and then rolled it around in a herbs de provence dry rub. I seared the meat, put the onions on the bottom of the pan and followed the recipe. Thanks for allowing me to make roast beef again!
