Description

Boston brown bread is a dense quick bread that does not require any yeast that traces its roots back to the first settlers of New England. This traditional New England recipe requires three different types of flour--wheat, corn, and rye. Sweetened with molasses, this brown bread is soft and flavorful. Bake time for this bread is one hour. Best eaten the day it is baked for optimal softness that will melt in your melt with each bite.

Ingredients

  • 120 grams wholemeal flour
  • 120 grams rye flour
  • 120 grams corn flour
  • 1/2 teaspoon salt
  • 3/4 teaspoon baking powder
  • 1 1/2 teaspoons baking soda
  • 115 grams molasses
  • 450 milliliters milk

Directions

  1. 1Preheat the oven to 150C.
  2. 2Line a loaf tin with parchment paper.
  3. 3In large bowl, add the flour, salt, baking powder, and baking soda, and make a well in the center.
  4. 4Heat the milk and molasses on low heat until dissolved, stirring continuously.
  5. 5Add the milk to the well of dry ingredients, and gradually mix together with a spoon until the dough is smooth.
  6. 6Fill the loaf tin with dough up to 3/4 full.
  7. 7Bake for at least 1 hour. Test with a skewer–if it comes out clean it is done.
  8. 8Leave to cool on a cooling rack.
  9. 9Best eaten the same day.
