  • 4 olive oil (turns around the pan of)
  • 4 slices bacon (diced)
  • 1 onion (large, diced)
  • 3 carrots (diced)
  • 3 celery (ribs, diced)
  • 5 cloves garlic
  • 12 ounces crimini (or other mushrooms, quartered or sliced)
  • 3 tablespoons tomato paste
  • 1 glass wine (either white or red, about 1 c.)

    Pretty tasty! Needed a bit of umph so added rosemary which went well. Only thing is that you have to cook it a lot longer than what is written here. I cooked it for three hours and some of the meat was still tough and I had turned it up to 325 about an hour into it.
