Bolognese Spaghetti Squash


Savory, juicy Bolognese covers the tiny strips of pasta in this comfort food delight! Ground beef is cooked and perfectly paired with acidic tomatoes, bitter onions, and bold earthy parsley. The thin courgetti pasta expands to take in all of the sauces flavors, only to be enhanced by the spicy taste of the garlic. Salt and pepper to taste and serve in a large bowl for the whole family to enjoy.


  • 1 spaghetti squash
  • 4 tomatoes (large)
  • 2 onions (minced)
  • lean ground meat
  • garlic (minced)
  • parsley (minced)
  • salt
  • pepper


  1. 1. Cook the spaghetti squash in boiling water for 45 minutes.
  2. 2. Plunge the tomatoes in boiling water for a few minutes and peel them. Puree them and turn them into a coulis.
  3. 3. Saute the minced onions then add the meat. Add the garlic and parsley. Season with salt and pepper. Add the tomato coulis and continue cooking.
  4. 4. When the spaghetti squash is cooked, divide it lengthwise and scrape out the spaghetti with a fork. Add the spaghetti to the bolognese sauce and serve.
