Ingredients

  • 1 stewing beef (Kilo of, in cubes)
  • 3 tablespoons olive oil
  • 1 onions (chopped)
  • 2 carrots (sliced)
  • 2 celery ribs (chopped)
  • 2 cups red wine
  • 2 1/2 cups beef broth
  • 3 tablespoons tomato paste
  • 3 garlic cloves (minced)
  • 3 bay leaves
  • 1 1/2 teaspoons dried thyme
  • 6 bacon slices
  • 1 cup sliced mushrooms (button mushrooms are good)
  • 1/4 cup fresh parsley (chopped)
  • 1 tablespoon corn starch
  • 2 tablespoons flour
  • 1 pinch salt (and pepper)
