  • 2 russet potatoes (large, 2 pounds, scrubbed)

  • 1/3 pound thick-cut bacon (diced)
  • 12 flour tortillas (6-inch)
  • 2 1/2 cups grated Monterey Jack cheese
  • 2 tablespoons unsalted butter
  • 4 large eggs
  • fresh tomato salsa (recipe follows)
  • 2 tablespoons chopped fresh chives (finely)
  • 2 beefsteak tomatoes (ripe, or 4 ripe plum tomatoes, diced)
  • 1/2 red onion (halved and thinly sliced)
  • 1 jalapeno chilies (finely diced)
