Blueberry Tarts


If you want to surprise you loved one with a sweet treat that is out of this world, then try making these Blueberries Tarts. The recipe combines a buttery tart crust with a decadent blueberry and almond cream filling. These are perfect for an intimate dinner among friends.   • 125 grams flour
  • 75 grams butter (diced)
  • 1 egg yolks
  • 50 grams sugar
  • 50 grams almond meal
  • 60 grams softened butter
  • 60 grams sugar
  • 1 teaspoon corn starch
  • 75 grams almond meal
  • 1 eggs
  • 1 egg yolks
  • 300 grams frozen blueberries
  • 150 grams blueberry jam


  1. 1Pastry Preparation:
  2. 2In a bowl, mix flour and butter by hand.
  3. 3Add egg yolk, sugar, and almond meal. Mix until well blended.
  4. 4Roll out dough on parchment paper, place between 2 baking trays. Refrigerate for at least one hour.
  5. 5Almond Cream Preparation:
  6. 6Cream butter and sugar, add cornstarch, almond meal, and finally, egg and egg yolk. Mix until well blended.
  7. 7Preheat oven to 356F.
  8. 8Cover 6 tart pans with dough. Fill to 2/3 full with almond cream. Bake for 13 minutes.
  9. 9Cool and unmold.
  10. 10Heat jam and pour in frozen blueberries. Mix gently.
  11. 11Divide fruit between tart pastry, and set aside for about 30 minutes before serving, just until blueberries thaw.
