  • 4 cups self-rising flour
  • 5 ounces blueberries
  • 1 1/4 cups buttermilk
  • 2 tablespoons olive oil (light)
  • 1 tablespoon milk (to glaze)
  • 1 cup vanilla yogurt (to serve)

Directions

  1. Preheat the oven to 450°F. Grease and flour a baking sheet.
  2. Sift the flour and a pinch of salt into a large bowl, then add the blueberries. Make a well in the center and pour in the buttermilk and oil, mixing with a round-bladed knife to make a soft dough.
  3. Turn the dough out onto a floured work surface and pull together into a rough ball. Dough should remain uneven and not be shiny. Pat out to a 1 inch thickness using hands. Cut into 2 inch rounds with a floured pastry cutter, rerolling and cutting any scraps. Place on the prepared baking sheet and brush the tops with milk. Bake for 12-15 mins, until golden.
  4. Serve warm with vanilla yogurt.
