- 1 shortcrust pastry
- 450 grams frozen blueberries
- 2 tablespoons ground almonds
- 3 tablespoons brown sugar
Directions
- Thaw frozen blueberries in a colander. Collect the thawed juice.
- Preheat oven to 425 degrees Fahrenheit.
- Let the dough rest for an hour, then roll out on a floured surface, and spread in a scalloped pie pan. Sprinkle the bottom of the pan with the ground almonds to absorb the excess fruit juice while cooking. Spread the blueberries on the dough, and sprinkle with sugar. Bake for 20 minutes.
- If desired, make homemade blueberry syrup with thawed juice. Weigh the fruit juice. Measure out half the weight of the fruit juice in sugar. Mix the juice and sugar in a saucepan and boil for about 10 minutes, skimming from time to time.

This is a yummy pie and I loved all the tips in the recipe. Using almonds to absorb liquid and using the blueberry liquid to make syrup are great ideas.
