Description

These blueberry muffins are as classic as they come. The dry ingredients are mixed with the wet ingredients just until combined, and then blueberries (tossed with some flour for even distribution) are folded in before baking until golden brown on top. Because they are made with oil rather than butter, the muffins have a soft, tender crumb. Serve some now and freeze the rest for up to three months; rewarm in the oven or let come to room temperature.

Ingredients

230 grams flour
2 teaspoons baking powder
1 teaspoon vanilla extract
150 grams sugar
salt
2 eggs
130 grams milk
70 grams vegetable oil
150 grams blueberries

Directions

1Preheat the oven to 180C.
2Combine all the dry ingredients in one bowl and the liquid ingredients in another bowl.
3Combine the dry ingredients with the liquid ingredients.
4Add the blueberries, slightly floured.
5Fill the muffin liners to 3/4 with the batter.
6Bake for approximately 25 minutes.
7Cool the muffins on a wire rack.
