Description

Dried blueberries, packed with healthful antioxidants, are the secret ingredient in these wholesome yet delicious brownies. Using dark chocolate ups the nutritional value—and gives the brownies their incredible taste. The batter will be quite firm, more so than you might think, and that’s okay; it will bake into a wonderfully dense, moist, and cakey brownie with a crunchy exterior. Serve warm or at room temperature, dusted with confectioners’ sugar if desired.

Ingredients

  • 200 grams sugar
  • 200 grams dark chocolate
  • 150 grams butter
  • 200 grams flour
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 150 grams dried blueberries
  • salt

Directions

  1. Preheat the oven to 180C.
  2. Melt the butter and chocolate over very low heat.
  3. Add the sugar, a pinch of salt, the vanilla extract, and the beaten eggs.
  4. Add the flour, melted chocolate, butter and blueberries.
  5. Beat for a few minutes until the ingredients are well combined. The batter should be uniform and quite firm in consistency.
  6. Place the batter in a rectangular wax paper-lined baking pan, at least 3/4 centimeters thick.
  7. Use the back of a spoon to level the surface.
  8. Bake for approximately 25 minutes. The top of the cake should be crunchy, but the inside moist and compact.
  9. Allow the cake to cool and cut it into squares.
