I baked this into muffins instead because I didn't have a loaf tin. I followed the recipe exactly and these came out amazing!! With turning them into muffins though, I only had to bake them in my oven for 30 minutes and they were done. They came out so soft and delicious! I will definitely make this recipe again.

Excellent recipe, great balance of flavor. My only suggestion is that the baking time is too short. You need at least 1 hour for it to set bake all the way through.

Super moist and light - I liked the texture much more than a traditional banana bread. I’m going to try to make it gluten free next.
