Description
A delicious addition to any meal, this cornbread recipe will have your guests reaching for seconds. Blue corn flour can be found in some large supermarkets or at speciality stores. Serve with Spicy Latin Back Ribs or Layered Pork Fajita Salad.
Ingredients

- 2 cups flour
- 2 cups blue cornmeal
- 2 Tbsp. baking powder (plus two teaspoons)
- 6 Tbsp. sugar
- 1 1/2 tsp. salt
- 2 cups milk
- 4 eggs (beaten)
- 1/2 cup vegetable oil

Directions
- Heat oven to 425 degrees F. Lightly grease two 8-inch square baking pans. In large bowl, blend well dry ingredients. In medium bowl, beat together milk, eggs and oil. Make a well in dry ingredients, add liquid ingredients and stir together; blending well but not overstirring (mix may be slightly lumpy). Divide batter equally between the two prepared baking pans. Bake for 20-25 minutes, until tops are nicely browned. Remove from oven and cool for at least 10 minutes before cutting into squares to serve.
