Ingredients

corn tortillas (blue, or regular corn tortillas)
2 chili peppers (Morita, seeded, or chipotle chilies)
1 chili peppers (arbol)
1 clove garlic
5 green tomatoes
salt
vegetable oil
250 grams mushrooms (sliced)
refried beans
chihuahua cheese (in strings, or Italian-style mozzarella)

Directions

1Heat the tortillas on a griddle until they are slightly crispy.
2Roast the chilies, garlic, and tomatoes on a griddle. Add the ingredients to a blender, including salt to taste, and puree until smooth.
3Heat the oil in a saucepan, add the mushrooms, and cook until golden brown. Add the tomato sauce and let it boil for 3 minutes.
4To plate, place a tortilla on a plate. Spread some refried beans on the tortilla. Add the mushrooms in sauce and Oaxaca cheese on top.
