Ingredients

  • corn tortillas (blue, or regular corn tortillas)
  • 2 chili peppers (Morita, seeded, or chipotle chilies)
  • 1 chili pepper (arbol)
  • 1 clove garlic
  • 5 green tomatoes
  • salt
  • vegetable oil
  • 250 grams mushrooms (sliced)
  • refried beans
  • oaxaca cheese (in strings, or Italian-style mozzarella)

Directions

  1. Heat the tortillas on a griddle until they are slightly crispy.
  2. Roast the chilies, garlic, and tomatoes on a griddle. Add the ingredients to a blender, including salt to taste, and puree until smooth.
  3. Heat the oil in a saucepan, add the mushrooms, and cook until golden brown. Add the tomato sauce and let it boil for 3 minutes.
  4. To plate, place a tortilla on a plate. Spread some refried beans on the tortilla. Add the mushrooms in sauce and Oaxaca cheese on top.

These are bursting with flavor. They can be served flat as an open faced tostada or curled up in to a taco. Heat the tortillas up before you serve them for them to taste the best and so they will be more pliable for bending. Serve them with pico de gallo and green chopped chili peppers on the side.
