  • 2 chili peppers (Morita, seeded, or chipotle chilies)
  • 1 chili pepper (arbol)
  • 1 clove garlic
  • 5 green tomatoes
  • salt
  • vegetable oil
  • 250 grams mushrooms (sliced)
  • refried beans
  • oaxaca cheese (in strings, or Italian-style mozzarella)

    Directions

    1. Heat the tortillas on a griddle until they are slightly crispy.
    2. Roast the chilies, garlic, and tomatoes on a griddle. Add the ingredients to a blender, including salt to taste, and puree until smooth.
    3. Heat the oil in a saucepan, add the mushrooms, and cook until golden brown. Add the tomato sauce and let it boil for 3 minutes.
    4. To plate, place a tortilla on a plate. Spread some refried beans on the tortilla. Add the mushrooms in sauce and Oaxaca cheese on top.
