Description

Add these incredibly rich and indulgent croquettes to your next cocktail party menu. You'll need to brush up on your bechamel-making skills, which is easy enough to do (just strain out any lumps as needed), and to buy a flavorful blue cheese, such as Cabrelas, which is melted into the hot sauce and then allowed to firm up in the refrigerator before rolling into little balls, breading, and frying. Make extra; they're likely to disappear fast.

Ingredients

  • 1 tablespoon butter
  • 1 tablespoon flour (sifted)
  • 0.5 liters milk (heated)
  • salt
  • ground black pepper
  • 100 grams cheese (Cabrales, or the blue cheese)
  • 1 eggs (beaten)
  • bread crumbs
  • vegetable oil (for frying)

Directions

  1. Start by making the bechamel sauce. Melt the butter in a skillet.
  2. Little by little, add the sifted flour. Do the same with the milk until you have made a thick sauce.
  3. Salt and pepper to taste and add the blue cheese little by little until melted.
  4. Spread the sauce on a flat tray and refrigerate for a few hours.
  5. Pinch off sections of the batter and roll into croquette balls. Coat balls in beaten egg and bread crumbs.
  6. Fry in plenty of hot oil.
