Description
Fresh ground pork is unseasoned and a great substitution for other ground meats in your favorite recipes.
Ingredients

- 1 bunch cilantro
- 1 bunch parsley
- 6 cloves garlic
- 2 shallots
- 4 oranges (Juiced)
- 3 limes (Juiced)
- 3 lemons (Juiced)
- 3 Tbsp. kosher salt
- 1 Tbsp. cumin
- 2 cups canola oil
- 4 lb. boneless pork shoulder roast
- 6 cloves garlic
- 1 gal. canola oil
- 2 cups mojo sauce
- 1 bunch parsley (Chopped)
- 1 shallot (Minced)
- kosher salt (To Taste)
- 1 lb. ground pork
- 2 Tbsp. mojo sauce
- 1 Tbsp. kosher salt
- 1/2 tsp. pepper
- 1 tsp. garlic paste
- 1 Tbsp. mojo sauce
- 1 cup mayonnaise
- 4 brioche buns (Or Other Egg Based Bun)
- 2 Tbsp. clarified butter (Melted)
- 2 Tablespoons Mojo Alioli
- 1 cup mojo pulled pork
- 4 sausage pork patties

Directions
- For Mojo Pulled Pork, preheat oven to 275 degrees. Place pork in a large deep pan like a Dutch oven, add garlic cloves, and cover in oil. Cover pan in aluminum foil and place inside the oven. Bake for 4 hours or until pork is tender. Remove the pork from oven and set aside to cool. Once pork has cooled down, remove the pork from the oil and begin to pull apart. Place pulled meat in a large bowl and season with mojo sauce, chopped parsley and minced shallots. Season with salt to taste.
- For Pork Patties, place all ingredients in a large mixing bowl and mix all ingredients well until combined. Shape into 4 patties and refrigerate until ready to cook.
- For Mojo Sauce, place all ingredients in a blender except for the oil. Blend until a smooth puree, then add oil slowly while blending to emulsify. Yield: 4 cups
