Blog Search Pork Burger Mojo


Fresh ground pork is unseasoned and a great substitution for other ground meats in your favorite recipes.


  • 1 bunch cilantro
  • 1 bunch parsley
  • 6 cloves garlic
  • 2 shallots
  • 4 oranges (Juiced)
  • 3 limes (Juiced)
  • 3 lemons (Juiced)
  • 3 tablespoons kosher salt
  • 1 tablespoon cumin
  • 2 cups canola oil
  • 4 pounds boneless pork shoulder roast
  • 6 cloves garlic
  • 1 gallon canola oil
  • 2 cups mojo sauce
  • 1 bunch parsley (Chopped)
  • 1 shallot (Minced)
  • kosher salt (To Taste)
  • 1 pound ground pork
  • 2 tablespoons mojo sauce
  • 1 tablespoon kosher salt
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic paste
  • 1 tablespoon mojo sauce
  • 1 cup mayonnaise
  • 4 brioche buns (Or Other Egg Based Bun)
  • 2 tablespoons clarified butter (Melted)
  • 2 Tablespoons Mojo Alioli
  • 1 cup mojo pulled pork
  • 4 pork patties


  1. For Mojo Pulled Pork, preheat oven to 275 degrees. Place pork in a large deep pan like a Dutch oven, add garlic cloves, and cover in oil. Cover pan in aluminum foil and place inside the oven. Bake for 4 hours or until pork is tender. Remove the pork from oven and set aside to cool. Once pork has cooled down, remove the pork from the oil and begin to pull apart. Place pulled meat in a large bowl and season with mojo sauce, chopped parsley and minced shallots. Season with salt to taste.
  2. For Pork Patties, place all ingredients in a large mixing bowl and mix all ingredients well until combined. Shape into 4 patties and refrigerate until ready to cook.
  3. For Mojo Sauce, place all ingredients in a blender except for the oil. Blend until a smooth puree, then add oil slowly while blending to emulsify. Yield: 4 cups
  4. For Mojo Alioli, place all ingredients in a food processor. Puree until smooth. Yield: 1 ½ cups
  5. To Build Burger, heat grill to a medium high heat. Once hot, grill pork patties, covered, over medium heat for 4-5 minutes on each side or until a thermometer reads 160 degrees.
  6. Half the brioche buns and brush both sides with clarified butter. Grill the bread to warm through. Remove buns from heat.
  7. For each burger, spread each bun with 1 teaspoon mojo alioli. Top bun with cooked patty and 1/4 cup of mojo marinated pulled pork.
