Ingredients

  • 2 sheets gelatin (4 grams)
  • 150 milliliters cream (liquid)
  • 150 milliliters syrup (orgeat)
  • 250 grams strawberries
  • 50 grams brown sugar

Directions

  1. Soften the gelatin sheets in a bowl of cold water.
  2. In a saucepan, heat the cream and almond syrup to boiling.
  3. Turn off the heat, add the gelatin, and stir well.
  4. Pour into silicone molds or glasses. Let thicken for at least 4 hours in a cool place.
  5. With a blender, reduce strawberries (with sugar) to liquid. Set aside.
  6. Present on a flat plate, with the grout and spiced biscuit crumbs.

I have made this recipe so many times and it never gets old. The strawberry flavor radiates through the entire dish while the almonds provide a crunchy bitterness I love. Excellent recipe if I ever saw one.
