You don't need an ice cream machine at all to prepare ice cream. Here, the ice cream base is simply poured into a bowl and frozen until solid, scraping the mixture with a fork every hour to create a creamy consistency. Blackberries lends intense color and flavor, while cream cheese imparts body that would otherwise be created by the churning. You can use other berries including blueberries and strawberries to equally good effect.

Ingredients

  • 200 grams sugar
  • 400 grams frozen blackberries (or fresh)
  • 200 milliliters milk
  • 50 grams low-fat cream cheese
  • 1/2 teaspoon vanilla extract
  • 200 milliliters cream

Directions

  1. In the blender or food processor, grind the sugar to a powder.
  2. Add the remaining ingredients except the cream and mix well.
  3. Use a spatula to scrape the sides.
  4. Add the cream and mix another 30 seconds.
  5. Pour the the mixture in a long dish and freeze.
  6. Stir with a fork every hour to break down the ice crystals that form.
  7. Serve plain or with chocolate chips.
