A soft moist berry cake featuring your favorite type of berry. Each bite is packed with flavor and light on the tongue. A perfect cake for berry season and a great reason to go berry picking.

Ingredients

  • 2 large eggs (or 3 medium-sized)
  • 1 natural yogurt
  • 100 milliliters milk
  • 100 milliliters milk
  • 50 grams softened butter (or margarine)
  • 180 grams flour
  • 200 grams sugar
  • 1 teaspoon baking powder
  • 1 cup blueberries (or other red fruit)
  • 1 tablespoon flour
  • powdered sugar (for coating)

Directions

  1. Preheat oven to 180 degrees Celsius.
  2. Grease a small round pie pan with margarine and dust with flour.
  3. Set aside.
  4. In a bowl, mix the eggs, milk, and butter. Beat until creamy.
  5. Add the flour, sugar and baking powder, mix until well combined.
  6. Pour the dough in the greased pie pan.
  7. Place the blackberries in a bowl, sprinkle with 1 tablespoon of flour, and gently mix without crushing the fruit.
  8. Evenly distribute the blackberries over the dough in the pie pan, and sprinkle with powdered sugar.
  9. Bake for 25 to 30 minutes.
  10. Remove from oven, and cool.

Really great recipe for a soft and moist cake that is packed full of flavor. It calls for blackberries, but you can really use any type of berry in this. The second time I made this, I did a mixed berry recipe with blackberries and blueberries. The two contrasting flavors worked well together. The base cake recipe is great, so experiment how you wish! It really has a lot of room for you to make it your own.
