  • 1 onion (chopped)
  • 15 ounces black beans (rinsed well, could also use several types of beans)
  • 14 1/2 ounces tomatoes (petite dice)
  • 12 ounces roasted red peppers (diced)
  • 4 ounces green chile (diced, I used Anaheim chiles, only mildly hot)
  • 4 cups chicken stock (I used homemade chicken stock.)
  • 3 tablespoons cilantro (dried, or less, if you're less enthusiastic about cilantro)
  • 2 tablespoons ground cumin (or less if you're not sure how much you like cumin)
  • 1 tablespoon minced garlic
  • 2 teaspoons Mexican oregano (dried, probably optional, but good in this)
  • 2 cups cooked chicken (diced, or more)
  • 1/2 cup chopped cilantro fresh (or more)
  • black ground pepper
  • salt
