  • 2 tablespoons lime juice (fresh-squeezed)
  • 1 teaspoon garlic (pure, or finely minced garlic)
  • 3/4 teaspoon ground cumin
  • 3 tablespoons extra-virgin olive oil
  • 1 jicama (small, peeled and diced into small cubes)
  • 1 cup fresh tomatoes (diced, I used Roma tomatoes, but any type of flavorful tomato will work)
