  • 1 cup butter (softened)
  • 3/4 cup powdered sugar
  • 3 medium eggs
  • 14 ounces condensed milk
  • 1 1/4 cups flour
  • 1 teaspoon baking powder
  • 24 ounces chocolate cookies
  • 1/4 cup milk
  • 2 teaspoons instant coffee powder
  • 1 tablespoon cocoa powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon gelatin powder
  • 1 tablespoon lemon juice

Directions

  1. For the batter, cream 11 tbsp of the softened butter with 2/3 cup of the powdered sugar. Beat in the eggs 1 at a time, then stir in half of the condensed milk. Sift the flour and baking powder together and stir into the mixture.
  2. Preheat the oven to 350°F. Grease a loaf pan and pour in about 1/3 of the batter. Spread the cookies on top. Bring the milk to a boil in a pan, mix in the coffee and cocoa powder until it has dissolved, then stir in the cinnamon. Stir the remaining batter into the hot milk, then add it to the loaf pan on top of the cookies. Bake for about 45 mins then cool for 30 mins, before carefully loosening the cake from the pan and turning it out onto a wire rack. Cool for 2 more hours.
  3. For the frosting, put 2-3 tbsp of water in a heat-proof bowl and sprinkle with the gelatin, stirring until the powder has absorbed all the water. Place the bowl in a pan of simmering water, and leave until all the gelatin granules have dissolved. Combine the rest of the condensed milk with the lemon juice and the gelatin, whisking for about a minute. Cream the rest of the powdered sugar and butter in a bowl. Add the condensed milk mixture and stir until smooth. Coat the cake with the frosting and chill for 1 hour before serving.
